Week’s end scramble

Yesterday, Roo was in the mood for breakfast food, but we ended up having ramen instead. This morning, I decided to give the man what he wants! It was also a perfect way to get rid of a bunch of stray remnants from the past week’s meals all at once.

But first things first…coffeeeeeee:

Le scramble:


bacon, cut in 2-inch pieces
chopped green, red bell peppers
chopped onion
cubed cooked baby red potatoes
5 eggs, lightly beaten
salt and pepper, to taste


In a large skillet, cook the bacon. Remove bacon to drain. Pour off all but 3 tablespoons of dripping. Heat the drippings remaining in the pan until sizzling. Add the bell pepper, onion and potatoes; cook, stirring gently, until the potato cubes are browned. Add bacon, then the eggs and cook, stirring gently until eggs are set. Season with salt and pepper.


I have no exact measurements for any of the ingredients because, like I said, I just used whatever was left in the fridge. I wish I’d had some mushrooms to throw in!
